What a perfect way to start a day, with delicate fluffy homemade pancakes stacked not so neatly. An assurance that each and everyone will get a little drizzle of that sweet syrup that’s in a slow paced race with our culinary treat called butter.
Cook time: 15 minutes Prep time: 20 minutes Difficulty: easy
1 1/2 cups of White Lilly all purpose flour
1 cup of Buttermilk
1 tablespoon of butter
1 teaspoon of baking soda
1 teaspoon of salt
Mix sifted flour, baking soda and salt in a bowl. Beat egg then add buttermilk and melted butter and stir into dry ingredients. Stir until batter is spongy and slightly thick, if too thin add more flour. Preheat greased skillet or waffle maker and drop 1/3 cup of batter in skillet, follow directions for waffle maker. Can use bottom of cup to spread batter in skillet if necessary.
Cook until each side is lightly browned. Cover pancakes wth jellies, jams, syrup or flavored butters of your choice. Pancakes really brings back childhood memories for me. Most fall and winter mornings started with either oatmeal or pancakes. Mom would cook up a stack of pancakes add fried potatoes smothered in crispy fried onions and the meat of choice would always be scrapple or bacon.
