Stretch and Fold Pattern for Dough

 

Use a floured rolling pin and roll dough on a lightly floured counter and shape into a rectangle. Proceed with a stretch and fold pattern similar to an envelop. Using a pastry scraper dipped lightly in flour lift dough from the end corners (furthest from you) and fold dough midway of rectangle. Then pull dough from the top corners (closest to you) and fold over rested dough.
