Brownies with Cream Cheese Frosting and Filling

This is a great tasting brownie but surely not your traditional brownie. The cream cheese filling  gives this brownie more of a fudge texture but definitely not a fudge taste. It’s more like a cake combined with a very rich flavored creamy cheese. And then to add more pleasure to this dessert you get a little extra cream cheese for the frosting. Trust me this is not your average too sweet kids dessert. Once baked and cooled I prefer to serve in bite size squares.

Prep time:  20 minutes    Cook time:  40 minutes    Yield:  9 servings    Difficulty:  easy

Ingredients for Brownies:

1 1/2 cups of White Lilly all purpose flour

1  cup of Stevia

3/4 cup of butter

4  ounces of Baker’s semi-sweet chocolate bar

2 eggs

2 tablespoons of  toasted walnuts

1 teaspoon of baking powder

1 teaspoon of vanilla extract

Ingredients for Filling:

4 ounces of cream cheese

1 1/2 tablespoons of Stevia

1 teaspoon of vanilla extract

1 egg yolk

 Ingredients for Frosting:

4 ounces of cream cheese

1 1/2 tablespoons of butter

1 cup of powder sugar

1 teaspoon of vanilla extract

Cover a 9 x 9 inch pan with parchment paper. Place butter and chocolate in a double boiler and stir until melted. Preheat oven to 350° F and mix stevia ( can use granulated sugar if preferred) and eggs in food processor until blended. Then add chocolate mixture, flour, baking powder, walnuts and vanilla. Once blended pour ingredients in baking pan. Next combine cream cheese, stevia, vanilla and a egg in food processor then pour filling over brownie mixture and bake for 40 minutes or until toothpick comes out clean. Finally combine cream cheese, butter, powdered sugar and vanilla in food processor until creamy then frost cooled brownies.
