Hasselback Potatoes

Ingredients:

4 large Russet  potatoes

4 tablespoons of bacon fat

Cheese of your choice

2 teaspoon of dried chives

1/4 cup of heavy cream

5 strips of crispy bacon

1/4 teaspoon of  Peppercorns

1/4 teaspoon of sea salt

Directions:

Preheat the oven to 425°F. Scrub the potatoes clean and pat dry. Place the potato in a wooden spoon to prevent cutting through the entire potato. Space the slices 1/8-inch to 1/4-inch apart. Brush the potatoes with bacon fat and sprinkle with dried chives, peppercorn and sea salt and bake for 45 minutes. The last 15 minutes of baking drizzle heavy cream over each potato and finish with crumbles of crispy bacon.
