Baked Chicken Thighs with Asparagus


Fried chicken is good but why not take it up a notch. This recipe not only gives chicken that crispy taste we all expect but adding a filling and baking those juicy thighs brings an amazing savory flavor you would not expect. Just lightly fry thighs in a skillet with roasted garlic butter. Then add a few strips of bacon along with cream cheese and asparagus. This dish could be prepared days prior to serving  just prep, lightly brown and refrigerate.

Prep time:  25  to  30 minutes      Cook time: 30 to  40 minutes     Yield: 3  servings    Difficulty:  easy


3  chicken thighs

Dollops of cream cheese

3  strips of bacon

3  asparagus

2  teaspoons of Singapore seasoning

2  teaspoons of Adobo seasoning

2  teaspoons of thyme

Coarse sea salt for taste


Asparagus was parboiled  and chicken thighs were pounded with a rolling pin until flatten and browned in a skillet in roasted garlic butter. Dollops of cream cheese, bacon strips and asparagus (which were cut in halves) were placed on the thighs. Thyme, adobo seasoning and Singapore seasoning were added and thighs were rolled and dipped in beaten egg wash and bread crumbs.  Each thigh was wrapped in wax paper and placed in the fridge for at least an hour (or longer if preferred). Prior to baking remove wax paper and place each thigh in foil and bake at 350° F  for 30 to 40 minutes. Last 10 minutes of baking remove foil and liquid. Season for taste.

Singapore Seasoning  consist of black pepper, lemon peel, citric acid, garlic, onion, turmeric, coriander, cumin, ginger, nutmeg, fennel, cinnamon, fenugreek, white pepper, cardamom, cloves and cayenne red pepper.

Adobo Seasoning consist of garlic, onion, black pepper, Mexican oregano, cumin and cayenne red pepper.
