Corn Fritter Cakes with Confectioner Sugar


Corn Fritters are served sweet or savory. They can be prepared with fruits and jams or syrups and creams. Savory fritters can have more of a cornmeal texture with ingredients added like chopped scallions, celery or garlic  to the mixture. Corn fritters can also be deep fried, fried or baked, creamed corn is often used with baked dishes. I decided to go with a sweet recipe since I’m still on my Vegetables in Dessert series. My ingredients gave my Corn Fritter Cakes a sweet taste and a fluffy soft texture.

Prep time:  20  to 25 minutes       Cook time: 20 minutes     Yield: 2 servings    Difficulty: easy


2 cups of frozen corn kernels

2 tablespoons of butter

1 teaspoon lemon juice

1 teaspoon of lemon zest

1 large egg

2 to 3 tablespoons of milk

2  tablespoons of all-purpose flour

2 teaspoons of sugar

1 teaspoon of sea salt

Black pepper to taste

Lightly drizzle honey

Sprinkle confectioner sugar


Beat egg ( don’t scramble) then mix thawed corn, egg, sifted flour, melted butter, lemon juice and zest, sugar and salt together until well blended. Grease skillet with oil to fry fritters until golden brown. Place on paper towels then lightly drizzle with honey and sprinkle confectioner sugar. Season for taste and serve hot.
